Sugaring off season!
While maple syrup production may have taken a back seat to our growing operation in recent years, our 6,000-tap maple grove remains an important part of La Récolte des Cantons! We added quota taps to our production in 2021, which led to the redevelopment of our tubing system in the grove and the construction of a new sugar shack.
Our maple syrup is certified organic by Ecocert Canada, and we make it the old-fashioned way, with wood we split ourselves in the bush. Taste is important, so we boil our syrup a little longer by putting more water in the stove to give it time to develop its flavour.
Bruno, Benjamin's father and Nathalie's husband, is in charge of sugar bush operations. He oversees syrup production in addition to managing the various work sites on the farm.
Family and Friends
We're very fortunate to have the help of family and friends during sugaring-off season. It's a very busy time at La Récolte des Cantons, and they contribute greatly to our success.
